Earlier today, I posted pictures of our Valentine's Day breakfast. It was really nice to have some morning time with my husband, something that hardly ever happens (usually because I can't seem to wake up until after 9 o'clock).
Mr. N really enjoyed the breakfast menu that I prepared just for him... and me! I had never in my life made quiche before, but it turned out great! This is another one of those recipes that you can play around with to fit what you have on hand. As long as the egg base stays the same, you can add whatever ingredients you want! The crust was also super easy, with just a few ingredients. Overall, I'd say that quiche will definitely be showing back up in our menu after today!
Crust Ingredients:
- 1 cup flour
- ½ teaspoon salt
- ¼ cup olive or canola oil
- ¼ cup ice water (I use refrigerated water)
In a large bowl, mix the flour and salt with fork. In a separate bowl, beat oil and water together with a whisk or fork to thicken. Pour the wet ingredients into flour and mix with fork. Press into 9" pie crust.
And that's it! How simple is that!

Quiche Ingredients:
- 8 whole eggs
- 1/4 cup milk
- 1 tsp Italian seasoning
- 1 tsp salt
- 1/2 tsp pepper
- 3 Roma tomatoes, washed and cut into thin rounds
- 3 cups tightly packed fresh baby spinach
- 1/3 cup (plus more for sprinkling on top ) of cheese (I used cheddar)
Preheat your oven to 375. In a large bowl whisk together the eggs and milk until smooth. Add in the seasonings and whisk until well-combined. Layer the spinach on top of the crust and the cheese on top of the spinach. Gently pour the egg mixture over the top, being sure to redistribute the cheese as needed to make it all even. Layer the tomatoes on top of the egg mixture. Bake at 375 for 30-40 minutes until the middle is no longer jiggly. Sprinkle with the remaining cheese and broil just until the cheese on top is brown and bubbly. Remove from oven and let sit for 5 minutes before serving. Enjoy!
