Just 2 Cupcakes

My husband goes to work in the afternoon and comes home pretty late, so most days, I am left to my own devices by myself in our apartment. Lately, this has been making me a little stir crazy, but until I find a job, that's how it's gonna be. Today I fought the madness by keeping myself (somewhat) busy. That entailed cleaning, laundry, and making myself a cupcake... or two... :)


This recipe makes exactly 2 cupcakes which is awesome because there's no need to lug out your mixer! 

Ingredients: Makes 2 cupcakes* 

  • 1 egg white
  • 2 tablespoons sugar
  • 2 tablespoons butter, melted
  • 1 teaspoon vanilla
  • 1/4 cup flour
  • 1/4 heaping teaspoon baking powder
  • Pinch of salt
  • 1 1/2 tablespoons milk

Preheat oven to 350°F. Line a muffin pan with 2 liners.

In a bowl, add the egg white and sugar and whisk until combined. Add in the vanilla and melted butter and stir until mixed. Add flour, baking powder, and salt and stir until smooth. Stir in the milk and divide the batter equally between the 2 cupcake liners.

Bake for 10-12 minutes or until cake is set and a toothpick 
inserted into the center of the cupcake comes out clean. Let cool completely & then frost as desired (I used buttercream frosting that I whipped up, just eyeballing the basic ingredients of butter, powdered sugar, heavy cream or milk, and vanilla, and tweaking it until it looked and tasted right to me).
